A recipe for Tomato Catsup (August 23, 1862)
Extra good, by a lady of Griffin, Georgia. Mix one-half bushel of ripe tomatoes, three boxes of mustard, three pounds of brown sugar, one pound of salt, one quart of vinegar, one-fourth pound each of black pepper, allspice, and cloves, six large onions, a handful of peach leaves, and two ounces of cayenne pepper (common red will answer). Simmer the whole three hours, then strain through a wire sieve or coarse muslin. Bottle and seal closely, and keep, as age improves the catsup.
